Rather than chop it off and make a new bow you may be better with Putting a deck piece from the bow tip to slightly behind where the bluff bow ended and sealing this so it wont leak, then filling the bow with fiberglass resin and lots of short cut snippets of chopped matting (read as much as you can stuff in as thats the strenght part of it all) and a low % of catalist when you mix the resin up, maybe 0.5% so it cures very slowly without internal cracking and excess heat, you'll have to stand it on its bow so it levels out. If you sus out the WEST SYSTEm of fiberglass repairs they may be able to sell you some fiberglass filling stuff that you can use instead of matting. Then once its filled and cured cut it almost right with a hack saw (not too much dust there) then grind to get the right shape with an angle grinder and sand paper disc (VERY DUSTY). dont know how you'll go as the flare of the hull where the last few meters of bow was changed when they rebowed it, so maybe do this to get the side view right and then do it again for each side of the bow to allow you to get the final flare right.
